Mini Coconut-Lime Panna Cotta

Lime Format: Zest + juice

Ingredients
  • 1 cup coconut milk
  • 1 tbsp honey or maple syrup
  • Zest of 1 lime
  • 1 tbsp lime juice
  • 1 tsp gelatin (or agar for vegan)
Directions
  1. Warm coconut milk with honey and lime zest (do not boil).
  2. Dissolve gelatin in lime juice and stir into mixture.
  3. Pour into ramekins and chill 3 hours.
  4. Garnish with toasted coconut and zest.
