Cilantro-Lime Power Bowl

Lime Format: Juice + wedge garnish

Ingredients

For the Bowl:

  • 1 cup cooked quinoa
  • 1 medium sweet potato, peeled and cubed
  • 1 cup canned chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 1 cup fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Lime wedges, for serving
  • Black or white sesame seeds (optional garnish)

For the Lime Dressing:

  • Juice of 1 lime
  • 1 tbsp olive oil
  • ½ tsp honey or maple syrup
  • Salt + pepper, to taste
Directions
  1. Preheat oven to 400°F (200°C). Toss sweet potatoes and chickpeas with olive oil, salt, and pepper. Spread on a baking sheet and roast 20–25 minutes, stirring once, until crisp and golden.
  2. Whisk together lime juice, olive oil, honey, salt, and pepper.
  3. In each bowl, layer quinoa and spinach. Top with roasted chickpeas, sweet potatoes, avocado slices, and cherry tomatoes.
  4. Drizzle lime dressing over the bowl, sprinkle sesame seeds, and serve with a fresh lime wedge.
